Zucchini Soup

The other night I got creative with my local, organic produce.  I’m sure you also experience the same thing – you only have a few things left and aren’t sure what to do with them but you need to use them up.  So…I made a lovely zucchini soup.  I sauteed chunks of zucchini, onions and a carrot in garlic olive oil.  After the veggies had softened, I threw them in the food processor with a little sea salt and pepper and a few splashes of almond milk.  I had also sauteed a portobello mushroom which I sliced and put on top of the soup along with a dollop of soy cream (mock sour cream).  So simple and yet so delicious.  Play around with the veggies and seasonings and create your own delicious soup with local, organic veggies!  Enjoy!

Landmark Grill + Lounge – Chicago

Saturday night we celebrated our engagement with friends at Landmark Grill + Lounge.  We really went there for the drinks but also thought it would be smart to have some appetizers.  I had the gnocchi which were not of the traditional shape but little pillows (that’s the best way I can describe them).  I was very impressed that the chef sources his ingredients from The Green City Market here in Chicago – all local and some organic goods. 

My one disappointment was they have foie gras on the menu – on the sliders – maybe elsewhere, I just didn’t continue looking.  It is the liver of a duck or goose who has been force fed through a metal pipe down their throats so that a mixture of corn can be forced directly into their gullets. In just a matter of weeks, the ducks become grossly overweight and their livers expand up to 10 times their normal size.   Only male ducks are used, and females are discarded by the industry.  SICK!  Please avoid eating this inhumane food!

Otherwise we had a great time – the DJ was good so we did a lot of dancing and enjoyed the night.

Did you know cocoa is one of the most highly sprayed products in the world?  I didn’t know that until I just read it from EcoFabulous.  I’m a huge fan of Green & Black’s chocolate, which is organic, sustainable and decadent.  It is the kind of chocolate that you savor rather than chow down the entire bar as fast as you can.  YUM!

I love to bake and I also love my ingredients to be organic and it at all possible – Fair Trade.  Therefore, I highly recommend Green & Black’s Fair Trade Cocoa Powder.  It is a little pricier than the basic cocoa powder you’ll find in the store but the other than being organic and fair trade it is of much higher quality and I like to use only the BEST in my baked goods :)

You may find this a silly thing to get excited about, but I haven’t had skittles in YEARS! I used to love them, but after becoming a vegetarian at 11 and shortly there after realizing they contained gelatin, I stopped eating them. So…I was super excited to read on VEGdaily! that after several years of them being gelatin free in other countries, they’ve finally taken out the gelatin in the US version.  Be sure to read the label though if you run out to purchase them today, although they’re now being manufactured vegan, the packages in the store may be from older batches.  TASTE THE RAINBOW! :)

These are pretty cute and we may actually see these in Chicago in the near future – I think it’s kind of a fun idea – at least it has practical uses!  If you read the entire story you’ll notice the comments posted by readers are pretty negative.  I don’t have a problem with them at all.  They’re useful and free, so why not?!  I’ll keep an eye out for them here in Chicago and will let you know when I see one  – or let me know if one of you see them first! :)

Natural Waxed Paper Bags

As you’ve all heard me say over and over I’m not a fan of plastic and avoid it being in contact with my food as much as possible. I when first began avoiding plastic I found it difficult to zip loc bags until I found natural waxed paper bags. These certainly aren’t as good as zip loc bags but they do the job and don’t leach chemicals into food, nor are they as much of a burden on the environment.  They’re brown because they don’t use bleach in the manufacturing process.  Give them a try!
