Erin at Kind Boutique recently posted her friend Davin’s DEVINE vegan egg salad sandwich recipe and I’m absolutely in LOVE with it! My old favorite egg salad was one from Whole Foods in Los Angeles, but when I moved to Chicago, the store here had a different one and they told me they couldn’t get the recipe from the LA store so I was out of luck. No worries, this stuff is far better! I’ve made these sandwiches with just the egg salad filling and I’ve made it with tomato and even with avocado slices – it’s great all three ways! Thank you Davin for my new addiction!
