I’m in LOVE with the English Toffee from Sjaak’s!  English toffee is one of my favorite treats but until now I hadn’t found a vegan one.  I will always yearn for Thornton’s toffee in England to make a vegan version, but Sjaak’s is delicious enough to fill that void for now!  They’re the perfect bite sized pieces, organic and fair trade.

Sjaak’s Vegan Peanut Butter Bites

I recentley purchased a bag of Sjaak’s Vegan Peanut Butter Bites from VegNews.  These little cups are delightful!  I’ve really been missing peanut butter cups so I finally bit the bullet and spent the money to buy these.  The ones at the drugstore are definitely cheaper but they’re “not cups friendly” as Eric would say.   This bag of 25 was $18.  Yeah, a little pricey but well worth it.  I’m not a big candy person anyway so it’s not like I’ve every eaten more than 3 a day – normally just one every couple of days.  They’re a great treat to have around.  I did a little research and found they actually come from Sjaak’s Organic Chocolates.  I had heard of them before but hadn’t ordered from them.  I guess that was in my early days of being vegan when I was used to getting an entire bag of chocolates at the drugstore for $3 so I was having trouble spending so much more – funny though, considering I used to go to Godiva and $1.50 for a piece of chocolate!  Anyway, I don’t even know where to begin.  I certainly don’t remember their vegan section being so vast last time!  I mean, when we’re talking candy, next to peanut butter cups, there isn’t anything better in my mind than English toffee.  I seriously considered cheating when my cousin was here for my wedding – she was supposed to bring me a bag and forgot – thank goodness, I probably would have felt badly.  Anyway, the point is, Sjaak’s VEGAN English toffee!  Absolutely amazing!  So, here’s just a sampling of the yummy things I have on my wish list…

Mini Pie

So I had a bit of left-overs from my pumpkin pie the other day so I got creative as usual.  I put my left-over dough in a small pyrex bowl, added some of my home-made mixed berry jam, some oats and topped it off with vegan chocolate chips.  What a yummy treat!

I use raw cacao powder to make hot chocolate and I add cacao nibs to my smoothies!

Raw Chocolate Coconut Fudge Balls

These are a super yummy, cold, minty treats that actually are good for you! 

1 coconut
1/2 C raw cacao powder
1/2 to 3/4 C raw agave (to taste)
1 T vanilla
1 t sea salt
1 t peppermint extract
1 T coconut oil (melted)
 
Blend the meat of one coconut in a food processor fitted with an “S’ blade until fairly smooth.  Next blend in agave, vanilla, sea salt, peppermint and coconut oil.  Roll into balls and place on a cookie sheet lined with wax paper.  Freeze them for a couple of hours then put them into an airtight container and keep in the freezer for when you need a little sweet treat!  Enjoy!

ok, even from just reading the name don’t they sound AMAZING?!!?!

I got my recipe from Vegan Cupcakes Take Over The World.  I used the basic vanilla cupcake recipe and added a few chocolate chips after they’d baked for 10 minutes.  Oh – I was out of vanilla so I used Kahlua which gave them a yummy flavor!  I frosted them with the peanut butter buttercream frosting.  Ugh, they’re absolutely delicious!
