I’m in love with the Peanut Butter Pit Bull bar from Rescue Chocolate!  This vegan chocolate peanut butter bar is absolutely fantastic!  In my opinion you just can’t go wrong with dark chocolate.  The filling is creamy peanut butter with an occasional crunch of crispy rice.  These are miles better than Reese’s PB Cups and not to mention vegan!  Better for you and the environment!

Vosges Haut-Chocolat creates not only beautiful, but delicious chocolates.  They’re based in Chicago but have boutiques in NYC and Vegas.  I was very excited to read that they also have a passion for the environment and are taking steps to lessen their impact on the environment in their manufacturing, packaging, shipping, and their over-all office environment. 

The highlights:

They’re powered by a 100% renewable energy source – the wind!  This is not only their manufacturing facility but their three boutiques!

Their candy bar boxes and folding cartons are made from 100% recycled paperboard and are recyclable.

Their shipping boxes are made from recycled cardboard and embellished with their logo—printed with water based purple ink.

They’re already using organic ingredients when possible but they’re planning to be 90% organic in 2009!

Pacari Ecuadorian Organic Chocolate

I was introduced to Pacari at the All Things Organic show in Chicago.  

Pacari is the first single origin organic chocolate made in Ecuador. They produce in small batches to maintain the intense flavor profile of their chocolate.

They carefully select the best ingredients to bring you the highest quality chocolate possible. All of Their ingredients are 100% organic and produced in a fair and equitable trade manner by small scale farmers in Ecuador.

I tried:

Pacari Chocolate Covered Cacao Nibs

Cacao nibs are the center of the cacao bean – the essence of raw chocolate. They are covered here in a rich dark chocolate for an amazing, true chocolate experience.

Ingredients: Cacao beans, cacao butter, evaporated cane juice, sunflower lecithin, banana (Dairy and soy free, may contain traces of nuts).

They’re absolutely decadent!

Did you know cocoa is one of the most highly sprayed products in the world?  I didn’t know that until I just read it from EcoFabulous.  I’m a huge fan of Green & Black’s chocolate, which is organic, sustainable and decadent.  It is the kind of chocolate that you savor rather than chow down the entire bar as fast as you can.  YUM!

Green & Black’s for Baking

I love to bake and I also love my ingredients to be organic and it at all possible – Fair Trade.  Therefore, I highly recommend Green & Black’s Fair Trade Cocoa Powder.  It is a little pricier than the basic cocoa powder you’ll find in the store but the other than being organic and fair trade it is of much higher quality and I like to use only the BEST in my baked goods
