Quinoa Stuffed Acorn Squash

This was such a delicious autumn dish.  Acorn squash, stuffed with quinoa, apples, currants and almonds – a blend of sweet and savory with a bit of a crunch.

Cut acorn squash in half, scoop out insides and bake face down in a pan (like mine above) with a bit of water in the pan, at 400 degrees until soft.

While baking, pour 1 cup of water in a sauce pan with 1/2 quinoa, bring to a boil then simmer with top on until water is absorbed.  Add 1/2 apple, 1 tablespoon toasted, slivered almonds, 2 tablespoons currants, 3/4 teaspoon garam masala and salt and pepper to taste.

Once the squash is cooked, flip the halves over, plop in a tiny bit of vegan margarine and a teaspoon of brown sugar, put back in the oven to melt for a minute then pull them out and fill with the stuffing!  The quinoa mixture is enough for two small acorns or possible one large one.

Peanut Butter Hot Chocolate

I’m not sure how I’ve never come up with this idea before because who doesn’t love anything and everything with chocolate and peanut butter together?!  I warmed some So Delicious Coconut Milk, with a tablespoon of peanut butter and a handful of Ghiradelli semi-sweet chocolate chips while whisking it until hot.  I topped it off with a few Dandies (vegan marshmallows from Chicago Soy Dairy) and it proved to be an amazing combination.  Perfect for a rainy evening while catching up on Real Housewives and Rachel Zoe.

Chocolate Peanut Butter Bars

These are my new favorite treat! They’re just like peanut butter cups but I think they’re better! They were perfect for making in our insanely hot summer weather since you don’t have to turn the oven on but they’re just as good to make as the weather cools.

 

 

 

 

 

Toss the following in the food processor:

1 package of graham crakers (not the entire box, just one of the packages inside the box)

2 cups of powdered sugar

1 cup of peanut butter

2 sticks of vegan butter

Once that is blended, put into a 9×13 pan and set in the refrigerator. While it is cooling, melt 1.5 cups of Ghiradelli semi-sweet chocolate chips (or any other vegan chips) with 2 tablespoons of peanut butter. Pour over top of the first layer and cool. Amazing!

 

Scotch Naturals Nail Polish Review

This is my manicure with Scotch Naturals nail polish from Green Girls Night Out – Chicago only 25 hours after getting it!  I mentioned the other day that the next morning it already wasn’t looking so great and then by that night I had no choice but to take it off.  The product is so natural and so much better than traditional polishes and even my fav – Zoya – but as much as I want to like it, it’s not at all practical.  I would never purchase this stuff.  My girlfriend who got a manicure with me was in the same boat – by the following evening her’s looked awful as well – so it’s not just me!  Bummer

Peanut Butter Filled Chocolate Cupcakes

Last week I made some super delicious cupackes for a friend’s birthday.  For Christmas my sister gave me this little tool that cores out the cupcake so you can fill them.  I hate to say it took me this long to use it but now that I’ve finally taken the time to do filled cupcakes, I think I’m going to have to fill every cupcake I make from here on out.  They were amazing!  Here’s what I did – I made the chocolate cupcakes from Vegan Cupcakes Take Over The World, filled them with the peanut butter frosting and topped them with the vanilla buttercream.  I think I might have to whip up another batch of filled cupcakes this weekend! 

 

 

Green Girls Night Out – Chicago Review

Last night my friend and I went to EcoStiletto’s Green Girls Night Out in Chicago. I’ve been to similar events and have learned that you need to be there early, waiting by the door for the mad rush when the doors open. I prepared myself by looking at the photos from the event in other cities and found they were doing manicures, which from past experience meant we needed to make a bee-line for that table and sign up immediately upon arrival. Shockingly there was no line at the door when we arrived at 5:40 about 10 minutes later someone told us we could go in. We didn’t rush to the manicure table but still managed to secure spots at 6:30 so we grabbed a cocktail and made our rounds to the stations – which again to my surprise there was no waiting to get to the front of the table. Our first stop at the front entrance was for an Envirosax tote and a perfume from Agape & Zoe Naturals. Next up was the Tom’s of Maine table where we scored a travel sized toothpaste and floss – my friend got a full sized tube of their strawberry, fluoride-free children’s toothpaste for her baby. Across the room we saw the Nicobella chocolates and I was hoping they’d have a vegan option – much to my surprise they were all vegan!  The pumpkin spice was amazing and super creamy (not always common with vegan chocolates due to the high content of cacao and no butter or milk) and the walnut flax was almost as good – only because I didn’t think it was as creamy but the flavors were great and you could actually taste the different notes of walnut and flax in it. Paula thought the walnut flax was creamier than the pumpkin spice so maybe in the end it just different among batches. Regardless, the chocolates were delicious and I would definitely purchase them. I was really looking forward to the Elemis table. I first discovered Elemis in the spa while on a cruise my senior year of college and then found it again that summer when I spent a month in England for my cousin’s wedding. The spa at the gym I joined there had it – of course – it was made in England! Since then I come across it now and then and even got some Elemis goodies from my Aunt at my wedding shower last year – she loves the products as well! I was most surprised to find that Nordstrom carries it now!

Next up were our manicures. I have read so much about Scotch Naturals nail polish and have been dying to try it myself. In theory it’s a fabulous product and I want to love it. It’s vegan, water based and insanely natural – no chemicals (way better than Zoya – which I LOVE). Head2Toe a mobile spa service did the manicures. The ladies were wonderful but having not used the product before they were only just learning how to apply it. According to the Scotch website you have to follow the directions to a T in order to have good results. I’m pretty sure they did, but the results still weren’t great. The polish is slightly streaky and does not have clean lines around the edges as conventional polish does – maybe being water based it bleeds? Not really sure but I walked away thinking they looked messy. I also had lots of stray polish around my nail beds which of course washed off when I got home, but it just didn’t impress me at first. Scotch also takes FOREVER to dry! It takes about an hour before you can even feel comfortable carefully touching anything and supposedly 6-7 hours to officially cure. When I first heard 6-7 hours I though who the heck has time for this? In the end, within 2 hours they seem pretty indestructible to me so it wasn’t that bad after all. That being said, 13 hours after the polish was applied they look like my Zoya polish looks after a full week of wear. They were worn at the edges by the time I got up this morning and after my shower I had a big chip on one of them. I’m going to hold out and see how much longer I can keep this on before I have to take it off. I’ll get back to you with a post on that.

We tried to hold out until the drawing for the diamond earrings at 8pm but at 7:40 we finally left. We were bored and freezing in the heavily air-conditioned room.

Oh – I don’t want to forget to mention my one complaint of the night. For being an eco-friendly event there were no vegan food options and only one vegetarian option! Shocking! The bruschetta had cheese and then there were crab cakes, chicken salad on bread and beef skewers (a real eco-sin!). I know not everyone is vegan – perhaps I was the only vegan there, but I would imagine there were at least a few vegetarians there and all they could eat was bruschetta! Since there was such a small crowd the woman serving the appetizers was houding us every 5 minutes with a new tray of stuff that I couldn’t eat. Jonathan Safran Foer recently said in an interview posted on The Ecologist, that environmentalists who eat meat have a blind spot, not to get preachy, but this is something I’ve had an issue with for quite some time. That being said, I was pretty disappointed to see 3/4 of the options at this event meat based.

 

 

 

Camping!

You may have seen me tweeting over the weekend while camping. It’s been a long time since I’ve camped – since high school! Despite some heavy rain and the most difficult canoe trip I’ve ever been on, it was a fabulous time. I kayaked a ton growing up but the section of the Paw Paw river we navigated was insane! We were constantly working to avoid fallen trees and doing some precise paddling to get through all the very narrow spaces. We barely had time to sip our drinks in between all the obstacle courses! At one point we had to lift our canoes over a couple of fallen trees in the middle of the river!

Luckily we had some delicious food to look forward to back at the campsite. I was loving using the pudgy pie maker! I made the following delicious combinations:
Vegan ham slices and Daiya Pepper Jack Cheese
The above sandwich with a few extras: green peppers, onions, and pizza sauce
Peanut butter, strawberry jam and chocolate chips

I also loved roasting my Dandies and turning them into s’mores with Green and Blacks chocolate and some Graham crackers. Delicious!!!

Such a fantastic weekend!

My friend Dana just pointed me in the direction of this great Guide to Meat Free from HSUS.  I’m pretty sure I remember seeing all these pages in a past issue of the magazine that HSUS sends to donors but I love that they put all these pages into a book and made it available in pdf via a quick download!

Chocolate Nesting Cookies

I discovered this idea on Crafterhours and immediately knew I had to make a vegan version ASAP.  I don’t know who thought of doing a chocolate chip cookie with an Oreo in the middle, but they’re a genius!  I’m calling them chocolate nesting cookies because they remind me of the Ukrainian nesting dolls I had growing up – like these…

one cookie inside of another, just like the little dolls!

these are super easy to make – whip up your favorite chocolate chip cookie dough recipe…

 

then form the dough around an Oreo cookie and bake!  easy peasy!

 

 

Cake Balls

Back at Easter I made some very yummy cake balls but never got around to telling you about them.  I know the big thing is making cake pops but that just added more complication to these already time consuming treats. 

 The recipe I followed over-complicated them so here is my simple version:

bake two Duncan Hines cakes (yes, the mix is vegan – just use your favorite egg substitute instead of adding an egg to the mix)

 crumble the cake into a large bowl and add 1.5 containers of Duncan Hines frosting (yep they have vegan frosting!)

scoop out balls of the mixture and place on a cookie sheet

put in the fridge or even freezer to cool them quickly – I cooled them just enough to be able to roll them into nicely rounded balls

while they’re cooling melt two bags of Ghiradelli Semi Sweet Chocolate Chips (yep, they’re vegan!)

covering them in chocolate isn’t the easiest thing – I can’t really tell you there is one amazing way to do it so if you don’t like my way, try something else.  I held each ball in one hand, filled a soup spoon with the melted chocolate and smoothed it over/around the ball – careful, that chocolate is very hot – I definitely burned my fingers!

sprinkle on some fun decor and put them back in the fridge to cool.  when they’ve hardened, pull them out and store them in an air-tight container.  I kept mine in the fridge and either ate them cold or would pull them out about an hour before serving – at which point they were super gooey and delicious

you could very easily make these with any type of cake and frosting.  It certainly took out several steps in the process by using a cake mix and pre-made frosting but since I NEVER buy that stuff I’ll likely make them completely from scratch next time
