Go Veg & Save The Planet!

Category : Animals, Environment, Food & Beverages

I was reading the recent Mercy For Animals Newsletter and found there is yet another study which points at animal agriculture for ruining our planet.  Nathan Runkle posted the following…

And now, researchers at Canada’s Dalhousie University have concluded that, based on current trends, raising animals for food will push the world near danger levels for global climate change and habitat destruction by the year 2050. The article entitled “Forecasting potential global environmental costs of livestock production 2000-2050” found that, due to population expansion, per capita meat consumption will have to be reduced by as much as 42% by 2050 just to keep environmental damage caused by animal agriculture at current levels.

According to a studyreleased in April 2008, if per capita meat consumption were reduced to mid-20th century levels, the costs of climate change could be reduced by 50%.

Whatever you can do to change your diet will definitely make an impact over time.  If you couldn’t imagine going veg “cold turkey” then take  it one step at a time – you don’t even have to have vegetarianism or veganism as your end goal – that may be too far off for many – just try adjusting your diet with baby steps.  You could…partake in Meatless Mondays, be vegetarian/vegan until 6pm, eat veg on the weekdays and have weekends be your meat days….or just simply make a conscious effort to eat less meat, eggs and dairy whenever its convenient for you

Game Day Chili Dogs

Cutting animal products from your diet does not mean that you have to miss out on all the yummy foods that go along with watching football.  On a recent Saturday while watching college football, I quickly threw together this yummy snack (while my carnivorous husband and his friends ate the non-cups version).  I grabbed a LightLife Jumbo Smart Dog  off the grill (my fav since they’re long enough to go to the end of the bun!), topped it with Amy’s Organic Medium Chili and Daiya Cheese and it was delicious!  I think the boys were missing out!

Faux Egg Salad Sandwiches

Category : Food & Beverages, Recipes

Erin at Kind Boutique recently posted her friend Davin’s DEVINE vegan egg salad sandwich recipe and I’m absolutely in LOVE with it!  My old favorite egg salad was one from Whole Foods in Los Angeles, but when I moved to Chicago, the store here had a different one and they told me they couldn’t get the recipe from the LA store so I was out of luck.  No worries, this stuff is far better!  I’ve made these sandwiches with just the egg salad filling and I’ve made it with tomato and even with avocado slices – it’s great all three ways!  Thank you Davin for my new addiction!

Veg Food at RJ Grunts – Chicago

Category : Dining Out

Yesterday afternoon we had a lovely meal at RJ Grunts in Chicago.  We live a few blocks away and have never been, so we finally made a point to stop over.  Everyone raves about the salad bar and they claim they were the founders of the salad bar idea.  To be honest, I wasn’t drooling over it.  So…I opted for the Portobello Mushroom Sandwich with their homemade cottage fries.  I had everything on the sandwich but instead of the cheese added avocado and it was delicious!

Flat Top Grill – Chicago

Category : Food & Beverages, Fun Things To Do

The other night Eric and I met a friend for dinner at Flat Top Grill with to start celebrating our wedding a little early.  I absolutely love Flat Top Grill.  They’re so accommodating for vegetarians and vegans.  They clearly label everything so you know what is safe and then you can have your stuff prepared on a separate, clean grill so it doesn’t mingle with the meat and dairy!  So awesome!

Peanut Butter Banana Soft Serve

Category : Food & Beverages, Recipes

Thanks to Chic Vegan for her post about the Banana Soft Serve!!!  I’ve found my new summer love!  Choosing Raw had this absolutely amazing recipe and I know I’m going to be addicted to this all summer long.  I love that she titled it – “This Post Will Change Your Life” – she was serious!

If you click on the photo you can see the original post and get the recipe.  Essentially it’s just frozen bananas!  I added peanut butter which was amazing.  Also, be sure to give your bananas a little time to warm up – I tossed them directly from the freezer into the food processor and let me tell you, that was CRAZY!  The poor machine went nuts and started bouncing all over!  Winston (my dog) came running wondering what the heck I was doing!  In the recipe she tops it with a chocolate sauce made with agave nectar.  I was out of agave so I ran to Whole Foods and discovered coconut nectar and thus tried that instead – it was great!

I don’t think you can get any healthier of an ice cream than this!  I was skeptical about eating mushed bananas but try it and you’ll be pleasantly surprised!!!

Very American Mac & Cheese

Category : Food & Beverages, Recipes

Happy 4th of July!!!

I was craving some all American style food today so I whipped up some vegan mac & cheese which was AWESOME!

I’m not much for measuring when and I like to just throw a bunch of stuff in.  I used a package of rice pasta, elbow macaroni (it’s gluten free and I was curious to try it – didn’t like the texture – it cooks for 17 minutes but even then didn’t seem done, I cooked it a little longer and then it started to fall apart but the center was still slightly uncooked – I think it’s just the way that pasta is – won’t buy it again but if I was celiac then it surely would be better than nothing!)  Anyway, after cooking the pasta I added:

1 heaping tablespoon of miso paste

3/4 package of Daiya shredded cheddar style cheese

1 heaping tablespoon of soy sour cream

1  tablespoon of arrow root starch

2 tablespoons of coconut milk

3 heaping tablespoon of nutritional yeast

1 clove of garlic (smashed through the garlic press)

lots of black pepper

this turned out SUPER CREAMY and delicious!

Ok, so I may have found my new heaven!!!  Fritz Pastry is AMAZING!  I’d read online that they have lots of vegan stuff so I was pleasantly surprised when I found out how much they really had AND got to see what an adorable little shop they have!  I will definitely be back very soon so I can sit and enjoy the full experience – and take photos for you!  I went on Thursday night on my way to the veterinarian’s office so I ran in, grabbed a Fritz Cake and a Streusel Cake and ran out the door eating the Fritz Cake.  I’m sorry I wasn’t on top of it enough to take a photo, but let me just tell you.  The Fritz Cake was one of the most amazing cupcakes I’ve ever had!  The chocolate cake part had the most amazing real chocolate flavor and the frosting was slightly salty which made it extremely complementary to the sweet cake.  I can’t rave about this place enough – stay tuned for a better post with more information and lots of photos!

This adorable little wine shop recently opened in our neighborhood.  I figured it was highly unlikely that they’d have an vegan wines but I still wanted to check it out and give our business to the new neighborhood hot spot.  Eric and I both ordered vodka drinks – yes, very odd for a wine bar – and then had sandwiches for dinner.  I had the Grilled Mediterranean Meadley:  Grilled Portabella Mushroom, Zucchini, Eggplant, Squash, Red Onion, Piquillo Pepper and Provolone (but actually no provolone!)  The sandwich was amazing!  I loved that although it was stacked high with flavorful veggies, they were sliced very thiny so it was manageable to eat.  For the side I had the papas asadas with ketchup instead of the aoli.  The papas asadas were great – a lovely change from a side of fries.  Eric had the P.L.T.:  Crispy Prosciutto, Bibb Lettuce, Sundried Tomato Pesto and Fresh Buffalo Mozzarella Cheese on baguette.  He liked everything about it except the choice of bread, he’s not a fan of baguette as its a little hard and thus hard to eat!  Next time he’d get it on the softer panini style bread I had.

The ambiance was great and the location can’t be beat so I decided to send an email to the owner requesting they carry a vegan wine and to my surprise, after checking with his distributor, the Le Paradou Rouge they currently offer is vegan!!!  I’m so excited to go back for a glass!  Although their selections will change over time, Chris, the owner, has assured me he’ll have his staff aware of the vegan options at all times.  So, if you’re up for a night out in Chicago for vegan wine, this is your place to go!

BBQ Pizza

Category : Food & Beverages, Recipes

I whipped this up for my BBQ sauce loving fiance the other night and it was awesome!  Whole wheat crust, caramelized onions, red peppers, garlic, BBQ sauce and Daiya mozzarella cheese.  We will certainly be having this again soon!

For the crust I grabbed the recipe from VegCooking

Crust

1 1/4 cups whole wheat flour
    1/4 cup gluten flour
    1/2 tsp. salt
    1 Tbsp. fast-rising yeast
2/3 to 3/4 cup very hot tap water (about 130ºF)

• In a food processor fitted with metal “S” blade, combine flours, salt, and yeast. Pulse on and off to mix. With the machine running, pour hot water slowly through the feed tube. Stop adding water as the dough forms a ball.
• Turn off the machine and feel the dough. It should be sticky, stretchy, and quite moist. If the dough is dry, add an additional tablespoon of water; if the dough is water-logged, add flour as needed. Knead the dough for about 40 seconds. Transfer the dough to a well-floured board and let sit for 2 minutes. Then roll out to a diameter of 13 to 14 inches. Top the dough as desired and bake at 450ºF until the crust begins to brown.

Makes 1 14-inch crust

Toppings

Begin caramelizing an onion, red pepper and garlic prior to making the dough so they have time to cook.  Make the dough and roll it out.  Spread on BBQ sauce – keep it light – I put a little too much on – you don’t want to use anywhere close to the amount you’d use if it were pizza sauce.  Sprinkle on the veggies and Daiya vegan mozzarella and bake at 450 – I don’t remember how long I had it in there – it was over 20 minutes I’d say.

Enjoy!!!
